Ingredients: 1 cup strawberries, hulled and roughly chopped, plus extra for serving
2 cups plant milk (I used Bonsoy) 2 tablespoons maple syrup 1 teaspoon vanilla extract 2/3 cup chia seeds
What to do: Place the prepared strawberries, plant milk, maple syrup and vanilla into a blender and blend until smooth.
Tip out into a bowl and add the chia seeds. Whisk until well combined, making sure there are no clumps.
Cover and place into the fridge to set for a minimum of one hour ( I find overnight gives the best results).
When set, spoon out into serving bowls or glasses and serve topped with remaining strawberries.
