1 large brown onion, diced
2 cloves garlic, finely chopped
1 tbsp fresh ginger, finely chopped
1 tsp ground coriander
1 tsp ground cumin
2 medium-large sweet potato, peeled & diced
1 cup red lentils
2 litres vegetable stock

What to do:
Heat a soup pot to a medium heat. Add the onions and sauté until they are beginning to brown and catch on the bottom of the pan. Deglaze with a splash of water, and repeat 2-3 times, or until onions are softening.
Add garlic, ginger and spices and cook, stirring, for another minute or two, deglazing as needed. Add the sweet potato, lentils and stock and bring to the boil.
Turn heat to low, cover and simmer for 30 minutes, or until sweet potato is very soft and the lentils have broken down.
Allow to cool slightly, then blend with a stick blender or mash with a potato masher for a chunkier soup.
Garnish with toppings of choice before serving.
