Apple & Strawberry Bircher


Serves 4


2 cups rolled oats

2 tbsp chia seed

2 cups bonsoy

2 cups water

2 red apples, grated with skin left on

1 punnet strawberries, hulled and diced

1 tsp vanilla extract or vanilla bean paste

½ tsp cinnamon

4 medjool dates, chopped


Combine all ingredients in a large bowl and mix together well.


Store in the fridge until serving. Keeps well for a few days.
